Perfect tailgate food!! Or a great appetizer for a party!!

Makes: 45 cups


  • 1 can Rotel, drained
  • 1 cup shredded swiss
  • 1 cup mayo
  • 1/2 lbs Turkey Sausage
  • 3 pkg. phyllo pastry cups – thawed


  1. Preheat oven to 350 degrees F.
  2. Fry Turkey Sausage until brown
  3. Mix in the first 3 ingredients and scoop evenly into the cups.
  4. Place on baking sheet and cook at 350 for 15 min.


  • 1 1/4 pounds of strawberries washed & Cut in halves , about 4 cups
  • 2 lemons , washed & quartered
  • ( use lime if you making strawberry limeade )
  • 1/2 – 3/4 cups of honey to taste adjust base on your preference
  • ( I prefer mine without honey)
  • I used used fresh sweet strawberries)
  • 6 cups of water
  • Ice
  • Garnished strawberries slices
  1. Blend the strawberries , lemons and honey with 2 cups of water
  2. strain the strawberries lemon mix , add additional 4 cups of water through the strainer
  3. if using honey : taste & add additional honey if needed
  4. serve cold over ice garnished with strawberry slices, lemon slices ( or herbs )

Bake in 400 degrees preheated oven for 10-12 minutes or until cheese is bubbly.

Remove and cool before using a fork to transfer mini pizzas from muffin tin to a serving plate.

  • 1 and 1/2 cups diced fresh pineapple
  • 1 banana
  • 1/2 cup Greek yogurt

In a large pitcher, combine 2 quarts brewed green tea (8 cups) with slices of orange, lemon, and lime to give it a citrusy-sweet punch. Enjoy up to 1 pitcher a day. Serve over ice; refrigerate for up to 3 days.

  • small jar Thin Sliced Dried Beef
  • 24 Ounces Cream Cheese, Softened
  • Green Onions
  • 1 Tbsp Worchestershire sauce
  • 1 tsp white pepper
  • 1/2 tsp Horseradish (Optional)

Chop the dried beef.  I usually pulse it in my food processor.  Reserve about 1/4 of the beef to roll the ball in.  Finely chop the Green onion.

Mix all the ingredients, except the reserved beef, together until well blended.

Form a ball and roll it in the remaining beef.

Chill and enjoy.

We usually serve this with Townhouse, Club, or Ritz crackers.  This cheese ball is amazing on the cubed bread!

I’ve even used leftovers on bagels the next morning.  Seriously, you can eat this on anything.



  • 5 tablespoons dried minced onions
  • 7 teaspoons parsley flakes
  • 4 teaspoons salt
  • 1 teaspoon garlic powder


Mix together and store in an air tight container.

For dressing: Mix 2 tablespoons dry mix with 1 cup mayonnaise and 1 cup buttermilk or sour cream.

For dip:  Mix 2 tablespoons dry mix with 2 cups sour cream.

Mix up a few hours before serving, so the flavors all blend.


  • 1 package fresh cranberries (not canned)
  • 1 jalapeno (with seeds removed)
  • 1 bunch cilantro
  • 1 bunch green onions
  • 1 tsp. cumin


  • Place all ingredients in a blender or food processor.
  • Pulse a few times, until ingredients are in small bits, but not completely blended together.
  • Serve over cream cheese with crackers or chips.
  • You can also serve as a relish over meats.
